FOUNDATIONAL CLASS OFFERINGS

INTRODUCTION TO PLANT-BASED COOKING
Learn the fundamentals for how to structure and prepare healthy, satisfying and well-balanced, plant-based meals that support optimum health and vitality from breakfast to dinner. In this class you will learn how to integrate more plants into your life that provide adequate protein, low-Glycemic / high fiber carbohydrates, and healthy fats. You will also learn various methods for preparing and cooking them, from sautéing, steaming, sweating, baking, braising, and more.
GLORIOUS WHOLE GRAINS
Whole grains are an excellent source of protein, fiber, vitamins E, B-complex, antioxidants, and minerals such as magnesium, zinc, iron, and selenium. Learn about a wide variety of gluten-free grains, how to prepare them, and delicious nutritious ways to integrate them into your cooking every day from breakfast to dinner.


BEANS / LEGUMES & BEAN PRODUCTS
Beans and legumes are an inexpensive yet powerful source of protein that are loaded with essential nutrients such as fiber, B-complex, magnesium, iron, zinc, potassium, and more. You will be introduced to an assortment of beans and bean products, and learn about methods for preparing and cooking them, such as soaking, sprouting, pureeing, steaming, and how to obtain maximum energetic health benefits from consuming them.
DAILY WONDER GREENS
Nature’s green leafy vegetables are the best source of bio-available calcium, and are high in essential minerals: magnesium, potassium, phosphorous, zinc, and vitamins; A, C, E, and K. They are also an excellent source of fiber, folic acid, and chlorophyll along with many other phyto-nutrients. In this class you will discover a variety of ways to prepare fresh, seasonal and flavorful vegetables that can be enjoyed as a centerpiece on your plate. Steaming, sautéing, roasting, blanching, and grilling will be demonstrated. Particular emphasis will be given to root and grounded vegetables.
DESSERTS & SNACKS
Learn how to make simply delicious, healthy, plant-based snacks and desserts that will satisfy any sweet tooth or taste buds. Recipes are dairy free, gluten free, egg free, sugar free, and guilt free!


HEALING HERBS & SPICES
Herbs and spices create flavorful meals and provide numerous health benefits. Discover a wide array of herbs and spices that can be found in grocery stores or gardens, their natural healing powers, and how they can be incorporated into a balanced and healing diet.
INTRODUCTION TO MACROBIOTIC COOKING
Learn the basic structure for a complete macrobiotic diet meal, which emphasizes whole grains, legumes, freshly prepared vegetables, nuts, seeds, and lacto-fermented foods. In this class you will learn techniques such as nishime, tempura, nabe, and kinpira, to prepare some of the common macrobiotic dishes and the importance of each dish.

- Classes are held in my home and generally run between 3-4 hours [depending on topic being covered].
- All classes include food and tastings [organic ingredients], recipes, and nutritional / health information about all the dishes being featured.
- Cost of each class is between $75 – $100 [depending on topic]
On-Site Hosted
- Classes take place in your home kitchen
- Classes run approximately 3 hours
- 4-5 dishes will be prepared
- Class includes all groceries, recipes, and sampling of each dish prepared
- Group size and topics negotiable
- Travel and food costs determined by need
